This vegan French toast is made without eggs and contains only a few simple ingredients. It comes together in just 20 minutes, making it the perfect quick and delicious weekend breakfast. Top with fresh fruit and maple syrup and enjoy!

Ingredients
- 1 tbsp ground flax
- 1/2 cup non-dairy milk (I used soy milk)
- 1 tsp maple syrup
- 1/2 tsp cinnamon
- 5 pieces of bread

Instructions
- To a shallow bowl, add ground flax, non-dairy milk, maple syrup and cinnamon. Stir and let sit for a few minutes for the ground flax to thicken the mixture.
- If using slightly stale bread, dip directly into the mixture. If using fresh bread, toasting it before dipping will help prevent sogginess.
- Heat a frying pan on medium heat.
- Once the pan is hot, add a little oil or vegan butter. Fry the toasts for 1-2 minutes on each side, adding more oil or butter when needed to help prevent the toasts from sticking to the pan.
- Serve with fresh fruit and maple syrup and enjoy!
Notes
*For an oil-free version of this vegan French toast, simply omit oil when frying the toasts and make sure to use a good non-stick pan.
