These stuffed dates with nuts & chocolate are a deliciously easy and healthy dessert or meal preppable sweet snack. I like preparing a big batch and storing them in the fridge, then enjoying throughout the week as a dessert or quick chocolatey snack. They’re so yummy, I can guarantee you’ll be needing to make them multiple times each week!

Servings: 8-10 stuffed dates
Ingredients
- 8-10 Medjool dates
- Cashew butter
- Walnuts
- 1/2 cup chocolate chips (dark or semi-sweet)
Equipment
- Microwave or double boiler
Instructions
- Use a knife to slice the dates open, then open them with your fingers and remove the pits.
- Once the dates are pitted, add ~1 tsp cashew butter (or your favourite nut butter) and a walnut inside the date. Repeat until all of the dates are stuffed.
- Add chocolate chips to a bowl and melt them in the microwave in 20-30 second intervals (or using a double boiler), stirring until the chocolate is completely melted.
- Add a spoonful of melted chocolate to the top of each date, then add all of the stuffed dates onto a plate and refrigerate for a few minutes to let the chocolate harden before eating.
- Enjoy as a sweet snack or dessert!
Notes
*Feel free to use any nut butter and stuff the dates with your favourite nut!
*These stuffed dates make a great meal preppable snack. Simply prepare as many as you’d like, then store in the fridge in an airtight container and enjoy whenever!
