This roasted tofu & leek sandwich with hummus is a delicious and healthy lunch or dinner. The tofu is marinated and roasted with olive oil, soy sauce, maple syrup, paprika and garlic. While it’s in the oven, leeks are sauteed with zucchini and garlic until soft. Get the recipe below, and enjoy!

Ingredients
- 2 tbsp olive oil
- 250-300g extra-firm tofu
- 1 1/2 tbsp soy sauce
- 1/2 tbsp maple syrup
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1 large leek
- 1 zucchini
- 4 cloves of garlic
- Pinch of salt
- 1/4 cup chopped cilantro
- Hummus
- Vegan mayonnaise
- Bread

Instructions
- Preheat oven to 400F.
- Thinly slice tofu into strips, then add to a mixing bowl with 1 tbsp olive oil, soy sauce, maple syrup, paprika, garlic powder and a small pinch of salt. Mix well, letting the strips break into small pieces, then add to a lined baking sheet. Roast for 20-25 minutes, tossing with tongs halfway through.
- Slice the leeks into 1/4 inch disks, thinly slice zucchini, and peel and mince garlic cloves. Thoroughly rinse leeks to remove any dirt.
- To a frying pan or pot on medium heat, add 1 tbsp olive oil, leeks and zucchini. Cover, stirring every couple of minutes, until softened.
- After about 15-20 minutes, once they’ve softened down, add the minced garlic and stir.
- Roughly chop cilantro.
- Assemble the sandwich with tofu, sauteed veggies, hummus, vegan mayo and cilantro, and enjoy!
Notes
*If meal prepping sandwiches, store tofu and sauteed veggies in containers, and assemble sandwiches in the morning or right before eating.
