Green Nourish Bowl

This super green nourish bowl is made up of simple ingredients and topped with a delicious creamy green goddess dressing. It’s ready in 30 minutes and will leave you feeling invigorated! See notes for a nut-free version of the green goddess dressing.

Cook time: 20 minutes

Servings: 2

Ingredients

  • 1 avocado
  • 1 green pepper
  • 1 broccoli crown
  • 1 cup cooked quinoa
  • 1 cup shelled edamame beans
  • 2 cups arugula
  • 1/2 cup roasted pumpkin seeds

Green Goddess Dressing

  • 1/2 cup roasted unsalted cashews (or sunflower seeds for nut-free)
  • 1/2 cup hot water
  • 1/2 cup parsley or cilantro
  • 1 garlic clove
  • 1 tbsp lemon juice
  • 1/2 tsp salt

Equipment

  • 2 small pots
  • Blender or food processor

Instructions

  1. Cook quinoa according to package directions to make about 1 cup of cooked quinoa.
  2. Boil water in a pot to blanch the broccoli.
  3. Thinly slice avocado and green pepper.
  4. Thaw frozen edamame beans with water in the microwave.
  5. Cut broccoli into small florets, then blanch for about 1-2 minutes in boiling water and drain.
  6. Prepare the green goddess dressing by first letting cashews (or sunflower seeds) sit in hot water for a few minutes until softened. Then, add cashews, water, and the rest of the ingredients to a blender or food processor. Blend for about a minute until you get a smooth creamy dressing.
  7. Mix the cooked quinoa, broccoli, avocado, green pepper, pumpkin seeds, edamame beans and arugula together in a bowl, top with dressing, and enjoy!

Notes

*For a nut-free version of the green goddess dressing, substitute sunflower seeds for cashews.

*Depending on the strength of your blender, you may need to soak cashews in boiling water for longer. I find the best blender for cashews is a bullet blender!
