This super green nourish bowl is made up of simple ingredients and topped with a delicious creamy green goddess dressing. It’s ready in 30 minutes and will leave you feeling invigorated! See notes for a nut-free version of the green goddess dressing.

Ingredients
- 1 avocado
- 1 green pepper
- 1 broccoli crown
- 1 cup cooked quinoa
- 1 cup shelled edamame beans
- 2 cups arugula
- 1/2 cup roasted pumpkin seeds
Green Goddess Dressing
- 1/2 cup roasted unsalted cashews (or sunflower seeds for nut-free)
- 1/2 cup hot water
- 1/2 cup parsley or cilantro
- 1 garlic clove
- 1 tbsp lemon juice
- 1/2 tsp salt

- 2 small pots
- Blender or food processor
Instructions
- Cook quinoa according to package directions to make about 1 cup of cooked quinoa.
- Boil water in a pot to blanch the broccoli.
- Thinly slice avocado and green pepper.
- Thaw frozen edamame beans with water in the microwave.
- Cut broccoli into small florets, then blanch for about 1-2 minutes in boiling water and drain.
- Prepare the green goddess dressing by first letting cashews (or sunflower seeds) sit in hot water for a few minutes until softened. Then, add cashews, water, and the rest of the ingredients to a blender or food processor. Blend for about a minute until you get a smooth creamy dressing.
- Mix the cooked quinoa, broccoli, avocado, green pepper, pumpkin seeds, edamame beans and arugula together in a bowl, top with dressing, and enjoy!
Notes
*For a nut-free version of the green goddess dressing, substitute sunflower seeds for cashews.
*Depending on the strength of your blender, you may need to soak cashews in boiling water for longer. I find the best blender for cashews is a bullet blender!
