The Best Marinated & Roasted Chickpeas

These are the best marinated & roasted chickpeas you will ever have! The smoked paprika gives a delicious smoky taste, and the marinade is made with only a few simple ingredients and no oil whatsoever. Enjoy them in a wrap, in a chickpea bowl with roasted veggies, or in salads!

Prep time: 2 minutes

Cook time: 18 minutes

Ingredients

  • 1 can of chickpeas (540mL)
  • 1/4 cup nutritional yeast
  • 2 tbsp soy sauce
  • 1/2 tsp smoked paprika
  • 3/4 tsp maple syrup

Equipment

  • Lined baking sheet

Instructions

  1. Preheat oven to 400F.
  2. Drain and rinse the chickpeas, then add them to a mixing bowl with nutritional yeast, soy sauce, smoked paprika and maple syrup. Mix well, then spread the chickpeas on a lined baking sheet. Feel free to add any other veggies you’d like to roast, such as carrots, into the marinade and then onto the tray with the chickpeas.
  3. Roast the chickpeas for 16-18 minutes.
  4. Once the chickpeas are ready, remove them from the oven.

Notes

*These marinated & roasted chickpeas can be enjoyed in a wrap (see my roasted chickpea wrap recipe here), in a chickpea bowl with other roasted veggies, and in salads!

*You can store the leftovers in the fridge for up to a few days.
