Prep time: 5 minutes
Cook time: 15 minutes
Servings: 6 peach halves
Ingredients
- 3 ripe peaches
- 1/2 cup large flake oats
- 1/4 cup almond flour
- 3/4 tsp cinnamon
- 1 tsp brown sugar
- Small handful of walnuts, chopped
- 1 tbsp maple syrup (+ more to fry)
- 1 1/2 tbsp olive oil
- 1/2 tbsp plant-based butter
Equipment
- Mixing bowl
- Pan (non-stick or grill pan)
- Lined baking sheet or air fryer
Instructions
- If using an oven, preheat to 325F (or if using an air fryer, see directions in step 3).
- In a mixing bowl, add oats, almond flour, cinnamon, brown sugar, chopped walnuts, 1 tbsp maple syrup and olive oil, and mix well.
- If using an oven, spread out on a baking sheet and bake for 12-15 minutes, tossing halfway. If using an air fryer, bake for 10-12 minutes at 350F, tossing a couple times.
- While the crumble is baking, prepare the peaches. Start by cutting them peaches in half and removing the pit.
- To a non-stick or grill pan, add plant-based butter and a drizzle of maple syrup and place the peach halves face down. Cover and let cook for 3-5 minutes, before flipping and cooking another few minutes.
- Serve up by adding a scoop of crumble to the top of each peach half, then drizzling with a bit more maple syrup. Enjoy!
