These 4-ingredient French crepes are an absolute treat! They make the perfect breakfast recipe for those craving a sweet start to the day, or even a dessert! I love serving these with cinnamon, maple syrup and berries (fresh or frozen!), and other great options include chocolate spread or plant-based yogurt.

Ingredients
- 1 cup white flour
- 1 1/2 cups soy milk
- 2 tbsp maple syrup
- 1 tbsp olive oil (+ more for frying)

Instructions
- Add the flour, soy milk, maple syrup and olive oil to a blender and blend for about 30 seconds until well combined.
- To a non-stick pan on low-medium heat, add a bit of oil or plant-based butter. Add a ladle worth of crepe batter to the pan (about the size of pancake), then pick up the pan and tilt it around in a circle to form a large round crepe.
- Cook for 1-2 minutes on the first side, until golden brown, then flip and cook for another 1-2 minutes.
- Repeat with the rest of the crepe batter, adding more oil/butter if the crepes start sticking to the pan.
- Serve as a sweet treat with fruit, cinnamon and maple syrup (or any other combination of toppings!).
