Making homemade gifts has always been my favourite part about the holiday season, especially when they can be done in under an hour (and they’re edible!!). This crunchy granola is made up of only a few ingredients that you likely already have in your pantry! It’s also customizable – add in your favourite nuts and seeds (mine are walnuts, almonds, and pumpkin!). Watch the video and grab the recipe below! PS: this makes about 2 jars worth; I often double this recipe if I want more!
Prep time: 10ย minutes
Cook time: 25 minutes
Servings: about 8 1/2 cups (~4 jars worth)
Ingredients
- 6 cups large flake oats
- 1/2 cup olive or vegetable oil
- 1/4 cup almond butter (or other nut butter)
- 3/4 cup maple syrup
- 1 tbsp cinnamon
- 1 1/2 cups unsalted nuts and/or seeds (I like using 3/4-1 cup walnuts, 1/4-1/2 cup almonds, 1/4 cup pumpkin seeds)
- Pinch of salt
Equipment
- Mixing bowl
- 2 lined baking sheets
Instructions
- Preheat oven to 325F.
- Roughly chop walnuts and almonds (or other nuts).
- Add all ingredients to a large mixing bowl and mix well.
- Add the granola to two lined baking sheets, spreading it out evenly with a spoon.
- Bake for 10-12 minutes, then remove from the oven and mix with a spoon.
- Bake for another 10-14 minutes, until golden brown. You don’t want it to burn, so I recommend starting with 10 minutes, and checking every couple of minutes from there until it is perfectly golden.
- Remove from the oven and let sit for 30-45 minutes (this will allow it to firm up and become crunchy!).
- Store in jars or containers (will store for weeks!). Feel free to decorate your jars with ribbons or other if gifting! Happy holidays!
Notes
*For nut-free version, simply use seeds such as pumpkin and sunflower in the granola, and swap almond butter for tahini or sunflower seed butter.
*For a gluten-free version, make sure to use certified gluten-free oats.
