This vegan crispy tofu baguette sandwich is one of my favourite lunches. It’s packed with mayo, avocado, tomatoes, lettuce and a big piece of crunchy tofu – what more could you want!

Ingredients
- 1/2 block extra-firm tofu (about 175g)
- 1 tbsp flour
- 1/4 cup plant milk (I used soy)
- 1/2 cup breadcrumbs
- 1 tsp olive oil
- 2 tsp garlic powder
- 1/3 cup vegan mayo
- Hot sauce
- 1/2 avocado
- 1/2 tomato, sliced
- 2 large pieces of lettuce
- Baguette (enough for 2 sandwiches)

Instructions
- Preheat oven to 400F.
- In a bowl, mix flour and plant milk.
- In another bowl, mix breadcrumbs, olive oil and 1 tsp garlic powder.
- Slice your block of tofu lengthwise into 2, then store the other half in the fridge (or double the batter and breadcrumbs for leftover crispy tofu). Slice again lengthwise to end up with two long thin slices, one per sandwich.
- Cover each piece in batter then in breadcrumbs and add to a lined baking sheet. Bake for about 30 mins until golden and crispy, flipping them halfway.
- Make the mayo sauce by combining vegan mayo, hot sauce (as many drops as you’d like) and the remaining 1 tsp of garlic powder.
- Once the tofu is ready, assemble your crispy tofu baguette sandwich with mayo, the crispy tofu, avocado, tomato and lettuce, and enjoy!
