Chocolate Chip Baked Oats (With Banana)

These chocolate chip baked oats (with banana) are a healthy and delicious breakfast or dessert recipe ready in 25 minutes. They’re made of 5 simple ingredients and packed with healthy whole foods (and no sugar, although they are sweet!). Top with some cacao nibs or chocolate chips, bake and enjoy! PS: this batter also makes delicious banana oat pancakes (recipe here!).

Prep time: 2 minutes

Cook time: 22-25 minutes

Servings: 1

Ingredients

  • 1/2 cup oats (large flake or quick)
  • 1/4 cup + 2 tbsp non-dairy milk (I used soy milk)
  • 1/2 banana
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • Chocolate chips

Equipment

  • Blender
  • Ramekin

Instructions

  1. Preheat the oven to 350F.
  2. Add the oats, non-dairy milk, banana, baking powder and cinnamon to a blender and blend until smooth.
  3. Pour the batter into a ramekin, then top with chocolate chips.
  4. Bake for 22-27 minutes, until a toothpick comes out clean.
  5. Feel free to top with more chocolate chips, then enjoy!

Notes

*I recommend using an 8-ounce ramekin for these chocolate chip baked oats.
