This easy black bean salad with a lemon and olive oil dressing comes together in 10-15 minutes and is the perfect meal preppable lunch or side dish. It’s made with red onion, red pepper, cherry tomatoes, cucumber, mango, avocado, black beans, cilantro and mint. The dressing is one of my favourite simple & tasty salad dressings. Ingredients
- 1/2 red onion
- 1 lemon
- 1 red pepper
- 300g cherry tomatoes (1 dry pint)
- 1/2 cucumber
- 1 mango
- 1 avocado
- 1 can of black beans (540mL or 19 fl oz), drained and rinsed
- Fresh cilantro
- Fresh mint
Lemon Dressing
- 1/4 cup olive oil (see notes for oil-free)
- 1 lemon (about 2-3 tbsp lemon juice)
- 1 tbsp Dijon mustard
- 1 tsp maple syrup
- 1-2 cloves of garlic
- Salt to taste

- Mixing bowl
- Jar for dressing
Instructions
- Thinly slice red onion, then add to your salad bowl with the juice of half a lemon (this helps โpickleโ the red onion).
- Dice red pepper, halve cherry tomatoes, dice cucumber, cut the mango into small pieces, and finely chop the fresh cilantro and mint.
- Add all of the chopped veggies to the salad bowl along with the black beans.
- Cut the avocado into chunks, then add to the bowl and squeeze the other half of the lemon (this helps prevent it from browning).
- Prepare the dressing by mixing together olive oil, lemon juice, minced garlic, Dijon mustard, maple syrup and a pinch of salt.
- Store the salad and dressing in containers and enjoy throughout the week!
