These homemade almond chocolate chip energy balls are made up of oats, nut butter & chocolate and are a perfect quick and healthy snack! They are sweetened with dates instead of sugar, making them refined sugar free. They take 5 minutes to prepare, 20 minutes to set in the fridge, then they can be enjoyed!
Prep time: 5 minutes
Refrigeration time: 20 minutes
Servings: about 16 balls
Ingredients
- 9 pitted dates
- 1/2 cup water
- 1 1/2 cups large flake oats
- 2/3 cup almond butter
- 2 tbsp ground flax seed
- 1/2 cup vegan chocolate chips
Equipment
- Blender
- Mixing bowl
Instructions
- Add pitted dates and water to a blender and blend until you have a smooth date paste.
- In a large bowl, mix together oats, nut butter, ground flax, date paste and chocolate chips. If the dough feels too sticky, feel free to add 1-2 extra tbsp of oats.
- Shape into 1 1/2 inch diameter balls and add these to a large plate. If you’re finding that the dough is sticking to your hands, slightly wet them when shaping into balls (this will prevent sticking!).
- Let them firm up in the fridge for at least 20 minutes.
- Enjoy! Store them in the fridge.
Notes
*I’ve used almond butter with in these energy balls, but feel free to use your favourite nut butter (or seed butter for a nut-free version)!
