Almond Chocolate Chip Energy Balls

vegan homemade almond chocolate chip energy power protein balls

These homemade almond chocolate chip energy balls are made up of oats, nut butter & chocolate and are a perfect quick and healthy snack! They are sweetened with dates instead of sugar, making them refined sugar free. They take 5 minutes to prepare, 20 minutes to set in the fridge, then they can be enjoyed!

Prep time: 5 minutes

Refrigeration time: 20 minutes

Servings: about 16 balls

Ingredients

  • 9 pitted dates
  • 1/2 cup water
  • 1 1/2 cups large flake oats
  • 2/3 cup almond butter
  • 2 tbsp ground flax seed
  • 1/2 cup vegan chocolate chips

Equipment

  • Blender
  • Mixing bowl

Instructions

  1. Add pitted dates and water to a blender and blend until you have a smooth date paste.
  2. In a large bowl, mix together oats, nut butter, ground flax, date paste and chocolate chips. If the dough feels too sticky, feel free to add 1-2 extra tbsp of oats.
  3. Shape into 1 1/2 inch diameter balls and add these to a large plate. If you’re finding that the dough is sticking to your hands, slightly wet them when shaping into balls (this will prevent sticking!).
  4. Let them firm up in the fridge for at least 20 minutes.
  5. Enjoy! Store them in the fridge.

 Notes

*I’ve used almond butter with in these energy balls, but feel free to use your favourite nut butter (or seed butter for a nut-free version)!
