These raspberry meal prep overnight oats are one of my favourite high protein and easy breakfasts and it’s about to become one of yours too! Each serving (1 container) contains 28g of protein, without any protein powder, and 19g of fibre (which is over 60% of the daily recommended fibre!). The oats are topped with frozen raspberries, hemp seeds, almond butter and nuts for healthy fats and protein. Store in the fridge and enjoy throughout the week!
Prep time: 5 minutes
Ingredients
Per container (1 serving):
- 1 cup large flake oats
- 3/4 cup soy milk (or other non-dairy milk)
- 1 tbsp maple syrup
- 1/2 cup frozen raspberries
- 1 tsp hemp seeds
- 3 tbsp almond butter
- 2 tbsp crushed pecans or walnuts
Equipment
- Jars or containers
Instructions
- In a jar or container, add the oats, soy milk and maple syrup and mix.
- Top with frozen raspberries, hemp seeds, almond butter and crushed nuts.
- Prepare as many jars or containers that you’d like for the week, then store in the fridge overnight and enjoy for breakfast throughout the week!
Notes
*Each container serves 1, so if you are preparing breakfast for 2-3 days, prepare 2-3 containers of overnight oats.
