This delicious dairy-free vodka penne pasta only takes 20 minutes to make and is a simple yet tasty dinner. I like to use penne as my pasta, but other pastas such as rigatoni would be delicious as well. The dish comes together in less than 20 minutes, then top with fresh basil and chili flakes, and dig in!

Ingredients
- 1 onion
- 2 cloves of garlic
- 1 tbsp olive oil for frying
- 1 tsp Italian seasoning
- 3/4 tsp salt
- 1 small jar tomato paste (150mL)
- 1/2 cup vodka
- 1 1/2 cups dairy-free cream
- 250-300g pasta (I used penne, or gluten-free if necessary)
- Fresh basil
- Chili flakes

Instructions
- Add water to a pot and bring to a boil to cook the pasta.
- Dice an onion, then fry with olive oil over medium heat. After 2-3 minutes, add minced garlic and sauté for another few minutes, stirring occasionally, until the onions turn translucent.
- Add Italian seasoning, salt, and tomato paste and mix well.
- Mix in the vodka and dairy-free cream. Let simmer for 5 minutes, then turn down the heat until the pasta is cooked.
- Once the pasta is cooked, stir into the vodka sauce. If the sauce has been reduced too much, feel free to add up to 1/4 cup of pasta water to loosen it.
- Enjoy with fresh basil and chili flakes!
