Shredded Tofu Tacos

These shredded tofu tacos are a simple and delicious dinner. Shredding your tofu gives it an amazing texture and then you’re frying it with a flavourful sauce. The tacos are assembled with lettuce, sautĂŠed peppers, the tofu and a delicious homemade guacamole – I promise you will be making these tacos on repeat!

Prep time: 10 minutes

Cook time: 25 minutes

Servings: 6 tacos (2 people)

Ingredients

  • 1/2 onion
  • 1 tbsp olive oil for frying (see notes for oil-free)
  • 1 red pepper
  • 1 green pepper
  • 1/2 tsp paprika
  • 1/2 tsp cumin powder
  • 200g extra-firm tofu
  • 2 tbsp ketchup
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp sweet chili sauce
  • 2 tbsp water
  • 2-3 lettuce leaves
  • 6 small tortillas (wheat or corn)

Guacamole

  • 1 avocado
  • 1/2 lemon (1 1/2 tbsp lemon juice)
  • 1/2 tsp garlic powder
  • Pinch of salt

Equipment

  • Frying pan
  • Blender or food processor
  • Baking sheet

Instructions

  1. Start by thinly slicing the onion and bell peppers, and mincing the garlic cloves.
  2. To a non-stick pan on medium heat, add 1/2 tbsp olive oil and the onion. Stir occasionally, adding the minced garlic and peppers after a few minutes.
  3. Add the paprika and cumin powder and continue stirring.
  4. Shred the extra-firm tofu using a grater.
  5. Once the onions and peppers have softened, place them in a bowl and cover with a plate to keep them warm.
  6. In the same pan, add 1/2 tbsp olive oil and the grated tofu. Stir every couple of minutes while you prepare the sauce.
  7. Mix together ketchup, soy sauce, sweet chili sauce and water. Once the tofu is golden brown, add the sauce to the tofu and reduce heat to low while you prepare the guacamole and lettuce.
  8. In a bowl, mash an avocado, then add lemon juice, salt and garlic powder.
  9. Wash and roughly chop lettuce.
  10. Assemble the tacos with guacamole, lettuce, sautĂŠed peppers and shredded tofu and enjoy!

Notes

*You can heat your tortillas in the oven or microwave before assembling the tacos.

*For an oil-free version, sautĂŠ the onions and peppers in a bit of water or vegetable stock, making sure to use a good non-stick pan. For the shredded tofu, simply omit the oil and fry it in the pan.
