Chocolate Rice Krispie Bars

If you love sweet chocolatey treats, you need to make these chocolate rice krispie bars. They only have 3 ingredients and come together in 30 minutes. This crunchy, chocolatey and high protein snack will become a new favourite! PS: it can also be made nut-free, see the notes at the bottom.

Prep time: 10 minutes

Freezing time: 20 minutes

Servings: 16 protein bars

Ingredients

  • 2 cups vegan rice krispies (no added vitamin D3)
  • 1 cup nut or seed butter (I used almond)
  • 1 cup melted dark chocolate

Equipment

  • Mixing bowl
  • 8 x 8 inch square pan

Instructions

  1. Mix rice krispies and nut butter in a mixing bowl.
  2. Melt dark chocolate, either in 30 second increments in the microwave or on a double-boiler.
  3. Line your square pan with parchment paper, then add in the rice krispie mixture and press down with a spoon.
  4. Pour over melted chocolate and spread evenly.
  5. Freeze for 20-30 minutes, then remove from square pan and cut into squares.

Notes

*For a nut-free version of these chocolate rice krispie bars, use a seed butter or soy butter (a favourite in my family!).
