If you are looking for an easy and tasty spin on ramen, you need to try these mushroom ramen noodles. This one-pot meal is the perfect lazy dinner and comes together in about 10 minutes.

Ingredients
- Handful of mushrooms (about 8)
- 2 tbsp olive oil
- 1 pack of ramen noodles (approx. 85g of noodles)
- 1 head of bok choy
- 1 green onion
- 1 tsp sesame seeds
Miso Sauce
- 1 tbsp white miso paste
- 2 tbsp soy sauce
- 2 tbsp maple syrup
- 1 tbsp sesame oil
- 1/4 tsp powdered ginger
- 2 garlic cloves

Instructions
- Chop mushrooms into thin slices, then fry on medium heat in a pot with olive oil, stirring occasionally.
- Prepare the miso sauce by mixing together miso paste, soy sauce, maple syrup, sesame oil, ginger and minced garlic.
- After the mushrooms have sauteed for a few minutes and have softened, add in the miso sauce and 1 1/2 cups of hot water.
- Cut bok choy leaves in half lengthwise, then add to the pot with the pack of ramen noodles. Add more water if needed to submerge the noodles.
- Let cook for a 3-4 minutes, then remove from heat and drain most of the liquid out.
- Serve the mushroom ramen noodles in a bowl with chopped green onion and sesame seeds, enjoy!
