Mushroom Ramen Noodles

If you are looking for an easy and tasty spin on ramen, you need to try these mushroom ramen noodles. This one-pot meal is the perfect lazy dinner and comes together in about 10 minutes.

Cook time: 10 minutes

Servings: 1

Ingredients

  • Handful of mushrooms (about 8)
  • 2 tbsp olive oil
  • 1 pack of ramen noodles (approx. 85g of noodles)
  • 1 head of bok choy
  • 1 green onion
  • 1 tsp sesame seeds

Miso Sauce

  • 1 tbsp white miso paste
  • 2 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp sesame oil
  • 1/4 tsp powdered ginger
  • 2 garlic cloves

Equipment

  • Small pot

Instructions

  1. Chop mushrooms into thin slices, then fry on medium heat in a pot with olive oil, stirring occasionally.
  2. Prepare the miso sauce by mixing together miso paste, soy sauce, maple syrup, sesame oil, ginger and minced garlic.
  3. After the mushrooms have sauteed for a few minutes and have softened, add in the miso sauce and 1 1/2 cups of hot water.
  4. Cut bok choy leaves in half lengthwise, then add to the pot with the pack of ramen noodles. Add more water if needed to submerge the noodles.
  5. Let cook for a 3-4 minutes, then remove from heat and drain most of the liquid out.
  6. Serve the mushroom ramen noodles in a bowl with chopped green onion and sesame seeds, enjoy!
