This lemon poppy seed oatmeal is a quick and easy breakfast and will level up your usual morning oatmeal recipe! It comes together in under 10 minutes and can be made on the stove or in the microwave.

Ingredients
- 2/3 cup large flake oats
- 1 1/4 cups water
- 1/2 lemon (about 1 1/2 tbsp lemon juice & 1 tsp zest)
- 1 tsp poppy seeds
- 2 tbsp sweetener of choice (maple syrup, brown sugar…)

Instructions
- To a small pot, add oats, water, juice from 1/2 lemon, zest from 1/2 lemon, poppy seeds and sweetener of choice (such as maple syrup, brown sugar, white sugar…).
- Bring to a boil, then reduce to a simmer, stir and cook for about 5 minutes or until the oatmeal reaches desired consistency.
- Top with fresh fruit and enjoy! If you like a little extra sweetness, you could top with more maple syrup.
Notes
*You can also make this in the microwave by adding all of your ingredients to a bowl and microwaving for 3-4 minutes (or according to the directions on your package of oats).
*You can swap water for plant milk for extra creaminess.
