These homemade garlic pickles are made with mini cucumbers, fresh garlic, and a few other simple seasonings. Store them in the fridge and enjoy on sandwiches or even on their own! The pickles will acquire a stronger taste over the next few days.

Ingredients
- 4 mini cucumbers
- 2-4 cloves of garlic
- 1/2 cup rice vinegar
- 3/4 cup water
- 1/2 tsp salt
- Chili flakes (optional)
- Fresh dill (optional)

Instructions
- Wash cucumbers and thinly slice them.
- Peel 2-4 garlic cloves (the more you use, the more spicy garlic taste you will get!).
- Mix together rice vinegar, water and salt in a bowl or measuring glass.
- Add the sliced cucumbers to a jar, then mince garlic and add to the jar with cucumbers.
- If adding any additional flavours, such as chili flakes and fresh dill, add them to the jar now.
- Fill the jar to the top with the rice vinegar and water mixture, until each cucumber slice is covered.
- Close the jar and give it a small shake.
- Refrigerate and let the cucumbers pickle for at least 4 hours, or even better if you can wait 1-2 days (the longer, the better!). Enjoy these homemade garlic pickles on sandwiches or as a crunchy snack!
Notes
*I recommend using 2 garlic cloves to start, and adding more if you want a strong and spicy garlic taste! Over the next few days, the pickles will really absorb the flavour from the garlic.
