Homemade Garlic Pickles

These homemade garlic pickles are made with mini cucumbers, fresh garlic, and a few other simple seasonings. Store them in the fridge and enjoy on sandwiches or even on their own! The pickles will acquire a stronger taste over the next few days.

Prep time: 5 minutes

Set time: 4+ hours

Servings: 500mL jar

Ingredients

  • 4 mini cucumbers
  • 2-4 cloves of garlic
  • 1/2 cup rice vinegar
  • 3/4 cup water
  • 1/2 tsp salt
  • Chili flakes (optional)
  • Fresh dill (optional)

  • Jar

Instructions

  1. Wash cucumbers and thinly slice them.
  2. Peel 2-4 garlic cloves (the more you use, the more spicy garlic taste you will get!).
  3. Mix together rice vinegar, water and salt in a bowl or measuring glass.
  4. Add the sliced cucumbers to a jar, then mince garlic and add to the jar with cucumbers.
  5. If adding any additional flavours, such as chili flakes and fresh dill, add them to the jar now.
  6. Fill the jar to the top with the rice vinegar and water mixture, until each cucumber slice is covered.
  7. Close the jar and give it a small shake.
  8. Refrigerate and let the cucumbers pickle for at least 4 hours, or even better if you can wait 1-2 days (the longer, the better!). Enjoy these homemade garlic pickles on sandwiches or as a crunchy snack!

Notes

*I recommend using 2 garlic cloves to start, and adding more if you want a strong and spicy garlic taste! Over the next few days, the pickles will really absorb the flavour from the garlic.
