Homemade No-Bake Granola Bars

vegan recipe homemade no-bake granola bars almond butter chocolate chip

These homemade no-bake granola bars are made up of oats, nut butter & chocolate and are a perfect quick and healthy snack! They are sweetened with dates instead of sugar, making them refined sugar free. They take 5 minutes to prepare, 30 minutes to set in the fridge, then they can be enjoyed!

Prep time: 5 minutes

Refrigeration time: 30 minutes

Servings: 10-12 granola bar squares

Ingredients

  • 6 pitted dates
  • 1/3 cup water
  • 1 1/4 cups large flake oats
  • 1/2 cup almond butter (see notes for nut-free)
  • 1/3 cup dairy-free chocolate chips (+ extra to top)

Equipment

  • Blender
  • Mixing bowl

Instructions

  1. Add pitted dates and water to a blender and blend until you have a smooth date paste.
  2. In a large bowl, mix together oats, nut butter, date paste and chocolate chips. If the dough feels too sticky, feel free to add 1-2 extra tbsp of oats.
  3. Add to a baking dish or large container and press down flat.
  4. Let set in the fridge for 30 minutes to an hour (or in the freezer to speed it up).
  5. Enjoy! Cover and store in the fridge.

 Notes

*I’ve used almond butter with in these energy balls, but feel free to use your favourite nut butter (or seed/soy butter for a nut-free version)!
