Chickpea “Tuna” Bagel Sandwich

This chickpea “tuna” bagel sandwich is a delicious plant-based alternative to a tuna sandwich. The chickpeas are mashed with spices and vegan mayo, making the sandwich saucy and packed with flavours. Enjoy this as a breakfast or brunch, a snack, or even a lazy dinner! Add your favourite toppings, bread or bagel of choice, and enjoy!

Prep time: 10 minutes

Servings: 2

Ingredients

  • 1/2 can chickpeas (540 mL)
  • 3 tbsp vegan mayo
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • Tomato slices
  • Avocado slices
  • Small handful of sprouts
  • Bread/bagels for 2 sandwiches

Equipment

  • Small bowl
  • Toaster

Instructions

  1. Add chickpeas to a small bowl with vegan mayo, salt and garlic powder. Mash the chickpeas with a fork until you get a creamy chickpea mash.
  2. Toast bagels or bread.
  3. Slice a tomato and an avocado.
  4. Once the bread/bagel is toasted, add the chickpea mash to both sides, then add the tomato slices, avocado slices and sprouts.
  5. Slice in half and enjoy!

Notes

*You could use the whole can of chickpeas and prepare a bigger batch of chickpea mash (make sure to double the quantities of vegan mayo, salt and garlic powder), and save to make more sandwiches later on.
