This blueberry crisp is one of my favourite easy desserts that everyone loves (even non-vegans!). It’s made up of simple ingredients that you likely already have in your pantry and only takes a few minutes to prepare. I love serving this crisp with my homemade peach nice cream. Enjoy!
Prep time: 5 minutes
Cook time: 50 minutes
Ingredients
- 4 cups frozen blueberries
- 2 tbsp maple syrup
- 1 tbsp cornstarch
- 1 cup large flake oats
- 1/3 cup white flour
- 1/4-1/3 cup brown sugar
- 1 tsp cinnamon
- 3 tbsp neutral-flavored oil (or melted vegan butter)
Equipment
- Mixing bowl
- 8 x 8 inch baking dish
Instructions
- Preheat the oven to 350F.
- Add frozen blueberries to your baking dish, then drizzle maple syrup on top, sprinkle the cornstarch and mix well.
- In a mixing bowl, mix together the oats, flour, brown sugar, cinnamon and oil (or melted butter). Depending on how sweet you like it, you can add 1/4-1/3 cup of brown sugar. Mix well then spread over the frozen blueberries.
- Bake for about 45-50 mins, until the oats are browning.
- Enjoy this easy blueberry crisp warm with some homemade peach nice cream (one of my favourites!) or on its own!
