Easy Blueberry Crisp

This blueberry crisp is one of my favourite easy desserts that everyone loves (even non-vegans!). It’s made up of simple ingredients that you likely already have in your pantry and only takes a few minutes to prepare. I love serving this crisp with my homemade peach nice cream. Enjoy!

Prep time: 5 minutes

Cook time: 50 minutes

Ingredients

  • 4 cups frozen blueberries
  • 2 tbsp maple syrup
  • 1 tbsp cornstarch
  • 1 cup large flake oats
  • 1/3 cup white flour
  • 1/4-1/3 cup brown sugar
  • 1 tsp cinnamon
  • 3 tbsp neutral-flavored oil (or melted vegan butter)

Equipment

  • Mixing bowl
  • 8 x 8 inch baking dish

Instructions

  1. Preheat the oven to 350F.
  2. Add frozen blueberries to your baking dish, then drizzle maple syrup on top, sprinkle the cornstarch and mix well.
  3. In a mixing bowl, mix together the oats, flour, brown sugar, cinnamon and oil (or melted butter). Depending on how sweet you like it, you can add 1/4-1/3 cup of brown sugar. Mix well then spread over the frozen blueberries.
  4. Bake for about 45-50 mins, until the oats are browning.
  5. Enjoy this easy blueberry crisp warm with some homemade peach nice cream (one of my favourites!) or on its own!
