These healthy banana oat waffles are delicious, gluten-free, and made with 5 simple ingredients! They’re packed with healthy whole foods (and no sugar, although they are sweet!) and will become your new go-to waffle recipe. Top with fresh fruit, some non-dairy yogurt and maple syrup for a little extra sweetness, and enjoy! They also pair perfectly with my homemade berry chia jam (recipe here!).
Prep time: 5 minutes
Cook time: 15 minutes
Servings: 2 waffles
Ingredients
- 1 cup oats (large flake or quick)
- 3/4 cup non-dairy milk (I used soy milk)
- 1 banana
- 1 tsp baking powder
- 1 tsp cinnamon
- Vegan butter
Equipment
- Blender
- Waffle maker
Instructions
- Heat the waffle maker on a medium-high setting.
- Add oats, non-dairy milk, banana, baking powder and cinnamon to a blender and blend until smooth.
- Brush vegan butter onto the top and bottom of the waffle maker. Add half of the waffle batter, then close and let the waffle cook. These waffles will take longer to cook than regular (white flour) waffles (on my machine, they take about 7-8 mins each, but yours may differ so keep a close eye!).
- Once the waffle looks golden brown in colour and feels cooked through (and not soft), use tongs to remove it from the waffle maker.
- Add more vegan butter and cook the second waffle.
- Serve with fresh fruit and maple syrup and enjoy!
Notes
*Two waffles is usually enough for two people as they are quite filling. If making breakfast for 3-4 people, I would suggest doubling the recipe. Depending on the size of your blender, you may need to prepare the batter in two batches.
