This delicious one pot gnocchi, sundried tomato & white bean soup is the perfect cozy fall or winter dinner. It’s made up of onion, celery, carrot, herbs, sundried tomato, spinach and other greens, cilantro, cannellini beans, gnocchi, and coconut milk. It only requires about 5-10 minutes of chopping, then everything gets cooked in a big pot. It’s gluten-free and dairy-free, and couldn’t be easierโyou’re going to love it!

Ingredients
- 1 large onion
- 2 medium-large carrots
- 3-4 celery stalks
- 4-5 clovesย of garlic
- 1 tbspย olive oil
- 1/2 tbsp Italian seasoning
- Salt and pepper
- 5 cups vegetable stock
- 1 can cannellini beans (540 mL, 19 fl oz)
- 500g uncooked gnocchi (gluten-free if needed)
- 1/2 cup chopped sundried tomatoes
- 2-3 cups greens (spinach, kale, arugula)
- 1/2-3/4 cup fresh cilantro
- 3/4 cup light or full-fat canned coconut milk
Equipment
- Large pot
Instructions
- Prepare your veggies by dicing onion, finely chopping carrots and celery, and mincing garlic.
- To a large pot on medium heat, add olive oil, then throw in your onion, carrots and celery and sautรฉ for a few minutes. Add in the minced garlic, Italian seasoning, salt and pepper and stir well, cooking for another few minutes.
- Add in vegetable broth, then cover and bring to a simmer.
- Once simmering, add the gnocchi. Next, add in a can of drained and rinsed cannellini beans.
- Roughly chop greens and cilantro and add them in, covering for 2 minutes to help them soften.
- Finally, add in your coconut milk and chopped sundried tomatoes and stir well.
- Serve immediately, and enjoy!
Notes
*Depending on the saltiness of your vegetable broth, you may need more or less salt. Make sure to taste and adjust to your liking!

Does this soup freeze well? Wondering because of the gnocchi. I doubled the recipe and unfortunately all 3 of my kids plus hubby weren’t a fan. I thought it was delicious. I’m making up a few containers to give to neighbors but would like to keep a bit for myself but I’m unsure about freezing it.

I ate it all up in 2 days so I haven’t frozen it, but I have with other soups in the past and it wasn’t a problem!

I just came upon this recipe today and had everything on hand. Wow! We absolutely loved it. Used homemade vegetable stock, mini gnocchi, and kale. Also added 1/4 tsp red pepper flakes. Will be making this all winter!!!!! Thank you for a fabulous recipe.
