These smoky tofu & grilled corn tacos are a delicious and healthy summer lunch or dinner recipe. The tofu is marinated and roasted with olive oil, soy sauce, maple syrup, smoked paprika and garlic. While it’s in the oven, you grill up some corn and make a creamy cilantro lime sauce. Watch the video and get the recipe below, and enjoy!

Ingredients
- 2 tbsp olive oil
- 450-500g firm or extra-firm tofu
- 2 1/2 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 cup shredded red cabbage
- 1/2 lemon (or 1-1 1/2 tbsp lemon juice)
- 1 cob of corn
- 6 small corn or wheat tortillas
- Green onion or fresh cilantro to serve
Cilantro Lime Sauce
- Large handful of fresh cilantro
- 50g firm tofu
- 1/4 cup roasted unsalted cashews
- 1 clove of garlic
- 1/2 lime (1 tbsp lime juice)
- 1/4 cup water
- Pinch of salt

- Lined baking sheet
- Mixing bowl
- BBQ or grill pan
- Blender
Instructions
- Preheat oven to 400F.
- Thinly slice tofu into strips, then add to a mixing bowl with olive oil, soy sauce, maple syrup, smoked paprika, and garlic powder. Mix well, letting the strips break into small pieces, then add to a lined baking sheet. Roast for 20-25 minutes, tossing with tongs halfway through.
- To a small bowl, add shredded red cabbage and lemon juice and let sit to slightly pickle.
- Grill corn on the BBQ or in a grill pan until slightly blackened. Once grilled, cut the corn off the cob. You could also use frozen corn and thaw it in the microwave or fry it in on the stovetop as an alternative.
- Prepare the cilantro lime sauce by adding lots of fresh cilantro, tofu, cashews, garlic, lime juice, water and salt to a blender, and blending until smooth and creamy.
- Assemble the tacos by adding a bit of cilantro lime sauce, then the smoky tofu, pickled cabbage, grilled corn, more sauce, and chopped green onion or cilantro. Enjoy!
Notes
*For a nut-free version, swap cashews for sunflower seeds or a white bean such as cannellini beans.
*If you don’t have a BBQ or grill pan, you could fry the corn on the stovetop or thaw frozen corn.
