This strawberry mojito mocktail is perfect for a delicious 5-minute happy hour drink (without the alcohol!). You’ll need a few simple ingredients, a muddler, and a cocktail shaker. The recipe makes 1 drink, so feel free to double or triple if you’re making multiple drinks!

Ingredients
- 2 tbsp lime juice
- 4-6 mint leaves (+ more to garnish)
- 2-3 frozen strawberries
- 1 tbsp white sugar
- Sparkling water
- Ice cubes

- Cocktail shaker
- Small strainer
Instructions
- Thaw the 2-3 frozen strawberries in a bowl in the microwave for 45 seconds to a minute, until they are thawed (there should be liquid at the bottom of the bowl and they should be easily crushable).
- Add the mint leaves to the cocktail shaker and use the muddler to crush them (this will extract more flavour!).
- To the cocktail shaker, add the thawed strawberries, lime juice, sugar, and about 3 ice cubes.
- Shake well, then pour it into a glass through a small strainer (this will catch the small pieces of mint and strawberry).
- Add a few ice cubes to the glass, then top with sparkling water and garnish with mint. Enjoy!

*If making this a cocktail, add 1 oz of white rum to the cocktail shaker.
