These easy chia pudding jars are a healthy and delicious breakfast that can be meal prepped ahead of time! The chia pudding needs to set overnight, then in the morning you can top it with a plant-based yogurt and fresh fruit and enjoy. Prepare them ahead of time and breakfast will be ready for the week.

Ingredients
(Per jar)
- 2 tbsp chia seeds
- 1/2 cup plant milk (I used soy)
- 1 tsp vanilla
- 1 tsp maple syrup
- Plant-based yogurt
- Fresh fruit

Instructions
- To a jar or container, add 2 tbsp of chia seeds, plant milk, vanilla and maple syrup (note: the quantities listed above are per jar – if making 3-4 jars, add the quantities listed to each jar).
- Stir each jar well with a fork or whisk. Let sit for 10-15 minutes, then stir again before closing the jars or containers. Let the chia pudding set in the fridge for at least 2 hours, or preferably overnight.
- After they’ve set, the chia pudding will have a jelly-like texture. Remove them from the fridge, top with some plant-based yogurt and your favourite fruits and enjoy! I’ve made one strawberry pudding, one mango, and one berry, and they were delicious!
