This easy fruit salad recipe is packed with a rainbow of delicious fruits and topped with a secret fruity dressing. I’ve used mangoes, oranges, kiwis, strawberries and blueberries in this salad, but you could use any combination of colourful fruits. Enjoy as a snack or healthy dessert!

- 2 mangoes
- 2 oranges
- 2 kiwis
- 1 box of strawberries (454g)
- 1 box of blueberries (1/2 pint)
- 3 tbsp orange juice
- 1 tbsp lemon juice
- 1 1/2 tsp maple syrup

Instructions
- Cut your mangoes. I like to cut mine by first cutting lengthwise on either side of the pit to end up with two halves (and a pit). Then, cut long slices lengthwise into each half (only cutting the fruit, without cutting through the peel), then cut again widthwise to form small cubes. Cut along the bottom to remove the fruit from the peel. Remove the peel from the pit and slice the remaining fruit on the pit.
- Peel the oranges and cut the pieces into small bite-size pieces.
- Peel the kiwis and cut into small pieces.
- Remove the tops from the strawberries and cut each strawberry into 4-6 pieces.
- To a bowl, add the chopped fruits and blueberries.
- In a small glass or jar, mix together orange juice, lemon juice and maple syrup.
- Drizzle the orange juice dressing over the fruit salad and enjoy immediately! If storing some in the fridge for later, it would be best to store without the orange juice dressing (store them separately and add the dressing right before eating!).
